Broccoli Breakfast Sandwich

Broccoli microgreens are the smallest microgreen we grow. They have a white stem with a heart shaped leaf that looks almost like a clover. Broccoli microgreens have small black seeds, each tray holds hundreds of tiny Broccoli plants. Our broccoli microgreens spend one week in germination and one week under grow lights, then we harvest them when they are 2-3 inches tall. They have the shortest shelf life of all the greens we grow, lasting a little over one week in the refrigerator.


Soy Sauce Eggs

2 eggs 

1 tbsp soy sauce

1/2 tbsp butter

In a small bowl whisk the eggs and soy sauce. Melt the butter in a medium warm pan and pour the egg mixture in. Scrape the bottom of the pan with a spatula to create curdles of egg until all of the egg is solidified. Turn off the heat and set aside.

Pan Toasted bread and seared ham

1/2 tbsp butter

1 or 2 pieces of bread

1 piece of sliced ham

In another pan, melt the butter and toast the bread until golden brown on both sides. Set the toast aside and add a piece of ham to the pan, cook for 1-2 min per side. Now everything is ready for assembly.

Assemble the Sandwich

1 oz of broccoli microgreens

Sriracha (optional)

Place the broccoli microgreens, ham, and eggs on the toast then drizzle sriracha on top and serve. This is a one serving recipe if you would like you can multiply for the amount of people you want to feed.
